SHORT HISTORY: Saó del Coster is a wine making project created in 2004 by a group of Swiss friends passionate about the Priorat and its wines. The Saó del Coster team works traditionally and follows a minimum intervention philosophy in terms of agriculture as well as winemaking, respects nature’s cycles, uses biodynamic treatments on its lands and animal traction and the moon calendar for all of the work in the vineyards as well as the cellar.

(MICRO)CLIMATE: Generally, the climate is more extreme than most continental areas although there are marked contrasts between valleys and highlands. Thus, there are cold northern winds, but these are buffered by the Montsant massif, and the warm Mistral blows in from the east. Summers are long, hot and dry while winters are cold. There is the occasional risk of frost, hailstones and drought. The average annual temperature is 15°C, and average annual rainfall is 400-600 mm.

TERROIR: Overhanging the Siurana River, Gratallops is in the heart of a slate basin, about 320 m above sea and about 16 miles from the sea. The ground is made of licorella, a very loose and soft slate. This stores heat and in addition also reflects light.
